Mom’s Banana Bread

This is the banana bread my mom has been making I know for at least 40 years. What I like about this bread is the limited ingredients yields a awesome bread enough for everyone we have made it for asks for the recipe or another loaf :O)

1 cup of white sugar-can used mixture of half brown and white sugar’s

1 large egg

1/4 cup of oleo -aka margarine or butter-I use yogurt butter

3-4 ripe bananas

2 cup of white flour- can use half whole wheat

1 tsp. baking soda

1/4 tsp. salt

Optional: 1/2 cup of chopped walnuts

Preheat oven or toaster oven to 350*F. Spray grease and 9 x 5 loaf pan.

In a large bowl, slice up bananas and mash well. Add in egg, butter and sugar mix together using hand or mixer. In a 2nd bowl, mix together your dry ingredients then slowly add them to your wet ingredient bowl until all is incorporated. If using nuts add them now and mix into batter. Pour batter into greased pan and bake for 1 hour or until knife/toothpick is clean. Allow to cool then removed from pan and slice.
